House Potato Salad
This recipe is Rhonda's own invention. She was never fond of potato salad growing up, but when she started her catering business, she knew she had to include this staple in her menu. The addition of the cheese gave it just the flavor she was looking for.
2 pounds potatoes, peeled and cut into bite sized cubes
1/2 stick butter, melted
1/3 cup mayonnaise
1/2 cup feta cheese, crumbled
1/8 teaspoon paprika
1/2 cup stuffed green olives, chopped
Salt and pepper to taste
Boil potatoes in salted water until tender. Remove from heat and drain.
Combine butter, mayonnaise, feta, and paprika in a blender and puree until creamy.
Pour mayonnaise mixture over potatoes and stir to combine.
Add olives and stir.
Season with salt and pepper.
