Mama's Macaroni and Cheese



Rhonda's mother used cheddar cheese in this recipe. When Rhonda started making it herself, she discovered she preferred the mild taste of Colby Jack. You may substitute your own favorite cheese, if you'd like.

1 cup elbow macaroni, uncooked

1/2 stick butter, cut into 1/4 inch pieces

2 cups Colby Jack cheese

1 egg, lightly beaten

2 cups milk

Salt and pepper to taste



Preheat oven to 375 degrees.

Boil macaroni noodles until tender, approximately 9 minutes.

Layer the butter in the bottom of a long, shallow baking dish.

Drain noodles and pour into the dish while still hot, stirring to melt the butter.

Add one cup of the cheese to the noodles and stir.

Add the egg, salt, and pepper.

Pour the milk over the noodle mixture. It will be very soupy

Sprinkle the remaining cheese on top and bake for 40 minutes, or until done.

To test for doneness, insert a spoon into the center of the dish and pull the noodles back. If the juices are white, continue cooking. If the juices are clear, the macaroni is done.
