Rick's New Year's Eve Chili



1 tablespoon oil

1/2 cup red bell pepper, diced

1/2 cup onion, diced

1 teaspoon garlic, minced

2 pounds ground beef

1/2 teaspoon cumin

1 teaspoon chili powder

1 teaspoon paprika

1/4 teaspoon chipotle powder

28 ounce can crushed tomatoes

15 ounce can diced tomatoes

15 ounce can kidney beans

15 ounce can pinto beans

15 ounce can black beans

1/4 cup fresh cilantro, chopped

Salt and pepper to taste



Heat oil in a large saucepan. Add bell pepper, onion, and garlic.

To the onion and pepper mixture, add the meat, cumin, chili powder, paprika, chipotle powder, salt and pepper. Cook until meat is no longer pink.

To the meat mixture at the crushed tomatoes, diced tomatoes, kidney beans, pinto beans, black beans, and cilantro.

Bring to a boil, then cover and simmer for 30 minutes.

Adjust salt and pepper as needed.
